Lemon poppy seed muffins
Last week I had a bake sale at school to help fundraise for my volunteer trip to New Orleans in May, and my friend Aya helped me baked a batch of lemon poppy seed muffins. They were so lemony and so good! I found a recipe and decided to make some on my own.
I am going to give this recipe 3.5/5. It wasn't lemony enough but the glaze is awesome. Probably the highlight of the muffcakes (smaller than a muffin, bigger than a cupcake). I read a comment that someone upped the lemon zest, yogurt, and extract to make it more lemony and moist (d'oh!). I will do that next time. Also I used corn oil instead of vegetable oil, so that's probably why it tasted a little bit off.
